Grain-free Red Pepper Sauce Meatloaf

A flavorful meatloaf without the gluten or grains; infused AND topped with a Red Pepper (no tomato) sauce.




Most meatloaf recipes contain crackers, bread crumbs, and sugar but these are completely unnecessary ingredients for a delicious meatloaf.

When I first transitioned my family from a standard American diet to a "PhazeMoldDiet my meatloaf recipe was among the first recipes I changed to a grain-free one.


KITCHEN ITEMS YOU'LL NEED

  • 9x5 inch Glass, Silicone, Stainless Steel or Cast Iron Loaf Pan. (Avoid non-stick or aluminum to avoid toxins)

  • Glass or stainless steel mixing bowl

  • Glass or stone cutting board to cut up vegetables

  • Kitchen cutting knife to cut vegetables




INGREDIENTS

1 lb grassfed beef

2 pastured eggs

1 small onion minced

1 Tbsp minced garlic

1/2 t celtic sea salt

1/4 t cayenne pepper

1 tsp psyllium husk powder

1 tsp Golden flaxmeal


MEATLOAF INSTRUCTIONS

  1. Preheat the oven to 350 degrees F (177 degrees C). Grease a 9x5 in (23x13 cm) loaf pan with avocado oil spray and set aside.

  2. In a large bowl, combine all ingredients. Mix together until well incorporated, but don't overmix.

  3. IMPORTANT!!: Wait approximately 20 minutes before transferring the mixture into the loaf pan so that the psyllium husk will expand and cause the mixture to bind better.

  4. Transfer the mixture into the loaf pan. Bake for 30 minutes.

  5. Spread the remaining 1/3 cup Red Pepper Sauce on top of the meatloaf. Return the loaf back to the oven and bake for 30 more minutes, until cooked thoroughly and the internal temperature reaches 160 degrees F (71 degrees C). (Time will vary depending on thickness of the loaf.)

  6. Let the loaf cool for a minimum of 10 minutes before slicing. Cut carefully using a serrated bread knife (not a chef's knife).




Red Pepper Sauce Ingredients

2 red peppers, sliced 1 clove garlic

1/8 tsp of celtic sea salt 2 tablespoons homemade tahini (do not use store bought. Most store brands contain ingredients that moldies should not consume) 1 tablespoon lemon juice 1 dash cayenne pepper

1 tsp paprika



Red Pepper Sauce INSTRUCTIONS

  1. Blend all ingredients in blender until creamy scrapping down the sides with spatula as needed to incorporate everything. Add water if needed for desired consistency. Taste for flavor and modify accordingly.
